Delicious kale and bacon
Ingredients:
1-2 heads of kale washed and trimmed (remove the center stem)
1 onion chopped
1/2-1 pack of bacon
3-4 cloves chopped garlic
1/4-3/4 C homemade broth (or boxed, I use Pacifico brand)
Seasoning (I use Charleston 10 spice)
Instructions:
I massage my kale. I put it in a big bowl ad squeeze it until it is dark green. Not for too long, maybe a minute or 2. Maybe 3. Depends how much kale I’m working with. Read about massaging kale here
Heat the pan (I use a wok pan)
add chopped bacon and cook until barely brown
add onion
season bacon and onion liberally
cook until onion is soft, about 8 minutes
add garlic about half way through cooking the onions
add kale and stir until all the kale leaves are coated in fat
add broth and stir
cover the pot and let the kale wilt, stirring occasionally (about 5-7 minutes)
